BBQ Wood Chips for Smoking

Directions for use:

1. Soak your chips – Submerge the woodchips in water for an hour before cooking. The water will make the chips burn slower and impart their smoky flavour more evenly.
2. Add to white-hot coals – Wait 15-20 minutes for your coals to die down and then add the soaked chips to the embers.
3. Use a smoker box – If you’re not using coals (or even if you are) a smoker box can be a great way to keep your chips, and chip ash separate from your grill. On a gas barbecue you can add soaked chips to your grill straight away and be cooking in 10-15 minutes – just as soon as you start seeing smoke.
4. Make your own DIY smoker – A smoker box is nice, but sometimes all you need is foil. Wrap your soaked chips in foil, making sure to seal it up neatly. Next, poke holes in the top with a toothpick or fork to let the steam and smoke out during cooking. Place inside your grill or on top of your coals.
